This recipe from Vectos’ Mike Axon is a great post-ride meal to up your protein levels, and a nice option for the warmer summer months.
1-2 chilli and garlic infused tins of tuna (or tinned fish of your preference)
4 new potatoes, cooked and sliced
Half a bunch cos lettuce
Half cucumber, sliced
6 baby tomatoes, halved
¼ red onion, sliced
2 radishes, sliced
Optional: handful coriander and pomegranate
Half a lime, juiced
A few slices of chilli
3 teaspoons apple cider vinegar
3 teaspoons olive oil
Salt and pepper
Combine all the salad ingredients in a bowl and make pour over the dressing. Easy!
